For the broth and the rice

Ingredients. Detail tomato sauce. Detail bouquet. Tied with celery, parsley and cilantro. You can also put long onions (branch onions). Add water with 1/2 teaspoon salt, coriander and garlic. Add chicken breast, salt and seasonings to taste. Leave to boil and cook for 30 minutes over medium heat. Once the breast is cooked, it is removed from the broth and reserved on a plate. When it is warm, it crumbles with the hand or with the help of two forks. Transfer the broth through a strainer. Measure 5 cups, return the liquid to the pot to bring to the boil. Add two tablespoons of oil, an envelope of seasoning Goya or color to the taste and salt or seasonings if they are necessary so that it is good flavor. Incorporate the rice, stir. Leave over medium high heat until dry. Cover and simmer for 15 minutes. Uncover and mix with a fork to separate the grains. Add the vegetables with the chicken, stir gently. Add chopped cilantro, stir. Serve warm, decorate with fresh parsley leaf. Accompany with french fries and ketchup.

If you do not have tomato sauce, you can use reduced ketchup with a little water for the preparation of vegetables.

I advise to use regular long grain rice so that the grain is loose, not arboreal nor calrose as it will become too sticky. Also neither jasmine rice nor basmati because they are very fragrant and totally change the flavor.
